I can create a trigg and use my Nest Thermostat E as the trigger, but when I try to create a trigg with Nest as the action, I can’t find the channel and when I use a predefined trigg, it says it can’t find my thermostat…

The Thermostat E with Heat Link for the EU is NOT supported in the Nest API.
